Skinny mashed potatoes

Anyone trying to get fit, healthy or loose some weight should be trying to cut down on their Carbohydrates intake which sadly means that although the Sunday roasts can stay the mashed potatoes and Yorkshire puddings have to go if you want the Heidi Klum dream bod.

I personally haven’t had a potato since October 2012, or rice, the only Carbs I eat these days are Wholewheat Provitas which I have as snacks daily.  I however am an extremist and my will power is second to none so I understand that this is not do-able for everyone, that being said I  found this rad recipe for “Skinny Potatoes” from Delighted Momma that I thought I would share and that I am going to be smashing in my face for dinner tonight.

What you need:

  • 1 head of cauliflower
  • 1 tablespoon of cream cheese
  • 1/4 grated Parmesan (I am going to use Mozzarella instead)
  • 1/2 teaspoon of minced garlic
  • 1/2 teaspoon of salt
  • 5 or so shakes of pepper
  • Chives to Garnish (If your fancy like moi)
What to do with the stuff you need
  • Cut the cauliflower into small pieces and boil in water for about 10-15 minutes or until soft and cooked.
  • Drain and dry using paper towels the place in food processor or blender. You do not want the cauliflower to cool!
  • Puree the cauliflower with the cream cheese, Parmesan cheese, garlic, salt and pepper
  • Sprinkle the top with chives and a few dashes of pepper. Serve!
TA DA! The best fake potatoes you will ever place in your mouth – with like half the calories.

  1. Yum! I do a similar thing and make a cauliflower puree (poach the cauliflower in milk) for a ‘healthy’ Carbonara. Love cauliflower, love!
